The guests were then guided through the history of chocolate in India by the head chef, Ms. Ruby Islam, https://www.linkedin.com/in/ruby-islam-601517146/. She further explained their intricate process of crafting artisanal chocolates, including sourcing cacao beans from local farms near the Telangana-AP borders and the west banks of the Godavari River. Ms. Islam highlighted how Manam stands out by infusing unique flavours into the cacao right from the sourcing stage and emphasized their commitment to fair trade and local farmer empowerment, dedicating 1500 acres to cocoa cultivation.
Following this, Mr. Sukumar Maharathy https://www.linkedin.com/in/sukumar-maharathy-93bab24/ led the guests on a tour of the ‘karkhana’, showcasing the various stages of chocolate production, from bean roasting and pre-refining to the final confectionery products. The store offers a wide range of final products, including chocolate bars, gelatos, and baked goods. The tour concluded with a delightful networking session over breakfast at their café in the backyard.
